Three Cheese Focaccia Muffins

Ingredients

Boar's Head® Pecorino Romano, P.D.O., grated
2oz
Boar's Head® Foodservice Provolone Cheese - sliced, grated
2oz
Boar's Head® Foodservice Mild Swiss Cheese - sliced, grated
48oz
Bread flour
1oz
Salt
1oz
Dry Yeast (Instant)
2oz
Butter
1oz
Honey
8oz
Milk
16oz
Water
6oz
Tomato, diced
1oz
Basil, chiffonade
1tsp
Olive oil

Instructions


  1. 01Put bread flour, salt, butter, honey and dry yeast in mixing bowl. Mix for 2 minutes on 1st speed using a dough hook.
  2. 02Add milk and water and mix for 2 minutes on 2nd speed, and 8 minutes on 3rd speed.
  3. 03Add the rest of the ingredients except olive oil and parmesan cheese. Mix until it comes together.
  4. 04Put 1 teaspoon of olive oil inside muffin pan, then cut dough and scale in 1-1/2 oz. pieces, then put inside muffin pan. Let sit at 90° F for 45 to 60 minutes.
  5. 05Put all cheese on top and Bake for 10 to 15 minutes at 360° F.
