Enjoy a savory twist on a breakfast treat. Traditional Hummus is blended with cornbread waffle batter and cooked until crisp, then layered with a dollop of hummus, bacon crumbles, sunny-side-up eggs and a hot-honey garnish.
Preheat waffle iron and lightly grease with cooking spray.
In a large bowl, combine the cornbread mix, milk, egg and half a cup of hummus.
Pour about 1/3-cup of batter into waffle iron, then cook until crispy and golden brown. Repeat with remaining waffles.
Top each waffle with a dollop of the remaining hummus, a fried egg, bacon crumbles and a drizzle of hot honey.
