London Broil Roast Beef Chimichurri Sub

  1. Chimichurri Sauce: Place all ingredients in a bowl, except olive oil. Using a fork, whisk in olive oil. Let mixture rest for 1 hour to allow flavors to come together.
  2. Preheat oven to 325 degrees.
  3. Slice the sub roll horizontally, creating two equal halves-- one top and one bottom. Lay slices of cheese along the bottom half of the bread.
  4. Layer roast beef on top of cheese. Spoon 3-4 tablespoons of chimichurri sauce on top of roast beef.
  5. Place the bottom half of the sub on a lined baking sheet, and place the top half of the bread on the baking sheet as well.
  6. Bake "open face" at 325 degrees for 12-18 minutes, until the cheese is melted and the sandwich is heated through.
  7. Place top of bread onto the chimichurri sauce, and enjoy.
