Applewood Ham Croque Madame

Instructions
Béchamel Sauce
- In a small sauce pan, over medium heat, melt 3 tablespoons of butter.
- Add the flour and whisk constantly for 1 minute.
- Slowly whisk in the milk until the sauce becomes smooth.
- Bring to a boil, and cook until thickened.
- Remove from heat and season with the nutmeg.
Croque Madam Sandwich
- Place one slice of bread on a clean work surface.
- Spread one side of the bread generously with the béchamel sauce (approximately 3 tablespoons), coated side up.
- Evenly layer the ham over the béchamel sauce.
- Top the ham with the Vermont Cheddar cheese.
- Top with the remaining slice of bread.
- In a sauté pan over medium-high heat, melt the 2 remaining tablespoons of butter.
- Once melted, place the sandwich and cook until well-browned on the bottom, about 2 to 3 minutes.
- Carefully flip the sandwich over and continue cooking until the cheese is melted and bubbling.
- Remove from heat and top with a pan-fried egg.
- Serve warm.
