London Broil Birria Tacos
Inspired by the street-cart favorite, these tacos are crispy, savory, and loaded with melty Monterey Jack Cheese. Thinly-sliced London Broil Roast Beef and canned chipotle peppers cut down on prep time, without sacrificing flavor.
Instructions
Birria Broth
- Heat oil in a small pot over medium high heat. Add chopped onion and peppers and sauté until onions are translucent, about 5 minutes. Mix in the beef broth and keep on low.
Tacos
- Preheat oven to 400ºF.
- Coat baking sheet with nonstick cooking spray.
- Dip tortillas in the prepared broth and place on the baking sheet. Top with roast beef and cheese, then fold tortillas in half.
- Bake for 5-7 minutes until brown and toasty.
- Serve and dip into remaining broth.
