London Broil Birria Tacos

Inspired by the street-cart favorite, these tacos are crispy, savory, and loaded with melty Monterey Jack Cheese. Thinly-sliced London Broil Roast Beef and canned chipotle peppers cut down on prep time, without sacrificing flavor.

Birria Broth

  1. Heat oil in a small pot over medium high heat. Add chopped onion and peppers and sauté until onions are translucent, about 5 minutes. Mix in the beef broth and keep on low.

Tacos

  1. Preheat oven to 400ºF.
  2. Coat baking sheet with nonstick cooking spray.
  3. Dip tortillas in the prepared broth and place on the baking sheet. Top with roast beef and cheese, then fold tortillas in half.
  4. Bake for 5-7 minutes until brown and toasty.
  5. Serve and dip into remaining broth.
