London Broil Roast Beef Chimichurri Sub

Shallot, finely chopped1
Fresno Chili, finely chopped3
Garlic cloves, finely chopped½cup
Red wine vinegar¼cup
Flat leaf parsley, finely chopped1tbsp
Fresh Oregano, finely chopped1tsp
Kosher Salt¾cup
Extra Virgin Olive Oil1
Sub roll6oz

- 01Header: Chimichurri Sauce
- 02Place all ingredients in a bowl, except olive oil. Using a fork, whisk in olive oil. Let mixture rest for 1 hour to allow flavors to come together.
- 03Header: Sub Sandwich
- 04Preheat oven to 325 degrees.
- 05Slice the sub roll horizontally, creating two equal halves-- one top and one bottom. Lay slices of cheese along the bottom half of the bread.
- 06Layer roast beef on top of cheese. Spoon 3-4 tablespoons of chimichurri sauce on top of roast beef.
- 07Place the bottom half of the sub on a lined baking sheet, and place the top half of the bread on the baking sheet as well.
- 08Bake "open face" at 325 degrees for 12-18 minutes, until the cheese is melted and the sandwich is heated through.
- 09Place top of bread onto the chimichurri sauce, and enjoy.
