Dressing
  1. In a small bowl, add orange juice, orange zest, rice wine vinegar, honey, vegetable oil, pepper and salt.
  2. Whisk ingredients together to form dressing.
Chicken Salad
  1. Slice Boars Head Teriyaki Chicken into strips and place to the side.
  2. Preheat oven to 350°F.
  3. Arrange almonds evenly on a baking sheet and toast for 5-8 minutes, stirring half way.
  4. In a large salad bowl, combines lettuce, sliced oranges, cabbage, shaved carrots, sliced red peppers, mint, and almonds into large salad bowl.
  5. Drizzle salad with the dressing.
  6. Toss lightly to mix all ingredients.
  7. Top salad with the sliced chicken.
  8. Add remaining dressing ass desired. Garnish with crispy rice noodles and serve.
