Blazing Buffalo Chicken Stuffed Sweet Potatoes
Roasted sweet potatoes are loaded with mouthwatering Blazing Buffalo Chicken, greek yogurt and Creamy Blue Cheese Crumbles for a hearty, fall dinner the whole family will favor.
- Preheat oven to 450ºF. Score the sweet potatoes with a fork, then place on a foil-lined baking sheet. Bake for about 45 minutes, until the potatoes are tender.
- Split the tops of the sweet potatoes open, then fill each with shredded chicken, a dollop of yogurt, blue cheese crumbles, green onion and hot sauce, if desired.
